Christine lost most of her vision in her early 20s due to Neuromyelitis optica (NMO), a rare autoimmune disorder. By the time she stepped into the MasterChef kitchen, she had only 2-3% of her vision remaining (light perception only).

Christine opened her own brick-and-mortar restaurant in Houston, The Blind Goat , in 2021. It specializes in "Vietnamese comfort food with a modern twist." It was a James Beard Award semifinalist for "Best New Restaurant" within a year of opening.
